QUESTIONS
WHAT IS WORTH KNOWING ABOUT ORDERING, ABOUT HONEY, AND ABOUT THE ORGANIC CERTIFICATE
ORDERING
- How do I order?
-
In the product list you say what you want and how much of it. The order collects in the box on the right — under the products on a phone — and the total is there with it.
When you are ready, the START AN ORDER button opens the form. We ask for a name and an email address, and for where and when collection would suit you.
The order is not final. We come back to you shortly and settle the payment and the collection between us.
- Where and when can I collect?
-
In person at Püspökszentlászló or Szalatnak, arranged in advance. From 10 products we can deliver to: Hosszúhetény, Pécs, Komló.
Without arranging it first we cannot receive visitors: we keep no stock at the house, and there is a fair chance we are out with the bees.
- Why is it not ready straight away?
-
We keep no stock. The honey is jarred freshly against the orders we have, so allow a few days.
We agree when it will be ready when we talk.
- How can I pay?
-
Cash on collection, or bank transfer in advance.
We agree how the receipt or invoice is issued when we arrange the order.
- Why do you not post honey?
-
Honey is a local product. Every landscape has its own taste.
We encourage you to find the beekeeper nearest to you and buy from them.
HONEY
- The honey I bought last year has crystallised. What should I do?
-
Sooner or later every honey crystallises, acacia included. Honey is a living material and crystallisation is a natural process. When it happens depends on the variety and on the storage temperature.
If you want crystallised honey liquid again, warm it gently, below 40 °C. Or look on the bright side: crystallised honey does not drip on your shirt.
- How long does honey keep?
-
The label gives two years from the harvest. Honey does not spoil: its high sugar and low water content leave bacteria unable to multiply in it. Time works on what is in it rather than on whether it is edible — light, warmth and air break those down slowly.
Keep it dark, cool and well closed. Crystallisation is not spoiling.
- From what age can a child eat honey?
-
Honey must not be given under one year old. Honey can naturally carry bacterial spores which are entirely harmless otherwise, but which can cause illness in an infant gut, where the flora has not yet established itself.
This holds for honey in general, for every variety and every apiary. Above one year there is nothing against it.
ORGANIC
- Is your honey organic?
-
The acacia honey and the beeswax are. Those carry the ORGANIC CERTIFICATE mark in the product list. The rest of our honey comes from the same apiary, made with the same care, but we cannot get a certificate for it.
The certificate is issued product by product, and mostly for single-flower honey: there you can show where the bees gathered. It is also a condition that nothing else comes into flower during the certified plant's bloom.
With mixed forest honeys we are not in a position to prove that. Lime would be a single-flower honey, but in some years the end of the lime bloom slips into the start of the sunflower. So it cannot be certified every year.
- How does an organic apiary differ from a conventional one?
-
We fit our work to the bees' instincts and to the rhythm of their year. We avoid rough intervention and avoid working them beyond what they can give.
The bees winter on their own honey. We do not take the winter stores from them and replace them with sugar syrup.
Against varroa we use organic acid and essential oil. These break down: they do not build up in the wax and they do not stay in the honey. Synthetic treatments do.
We keep material brought in from outside to a minimum. The wax the combs are built on, for instance, comes only from our own apiary. We do not exchange wax for foundation of unknown origin.
- Who checks that you keep to the organic requirements, and how?
-
The apiary is inspected by Biokontroll Hungária (HU-ÖKO-01). The inspection covers how the bees are kept, how they are treated, how the honey house is equipped, and our records.
An on-site inspection is compulsory once a year, and they may also come unannounced.
